Everyone loves quick recipes and once you get into a routine it is easy to start preparing fresh meals daily. So many people need to prepare meals for one and this is certainl ideal.
You will need: 110g pasta of your choice 1 tablespoon plain or greek yoghurt 150g smoked salmon 1 tablespoon olive oil 1/4 small onion, finely chopped 1 clove garlic, finely chopped 100g mushrooms sliced 150g kale, stem removed and chopped finely around 3 tablespoons for mixed fresh herbs and parsley 1/2 teaspoon curry powder 150ml white wine or use 150ml vegetable stock salt and pepper, if needed to suit your personal taste a touch of grated lemon zest
Method Cook the pasta according to the instructions on the packet Place the olive oil in a large pan on low heat. Add the onion and cook until translucent. Add the curry powder and the chopped garlic clove. Then add the kale, the mushrooms, the wine or stock. Turn up the heat and bring to a boil and keep stirring with a wooden spoon until the liquid reduces and the mushrooms are cooked, making sure that you do not overcook the vegetables. Remove from the heat. Allow to rest for 5 minutes then add in the yogurt. Do so by first adding some of the cooking liquid to the yoghurt, stir and then gradually add to the pan stirring constantly to avoid having any lumps or curdling Add the pasta. And finally add the smoked salmon. Finish off with a bit of grated lemon zest. Serve warm or great the next day as a pasta salad.
