Coconut gives a moistness to any bake and this very very quick all in one is ideal if you wish to impress with a fresh homebake. Provided you have all the ingredients ready it literally takes under 5 minutes to prepare from start to finish.
I like the idea of coconut being rich in Selenium, a strong mineral that plays an important part in the function of our metabolism and thyroid.
For the very quick coconut cake, you will need:
200g self raising flour 100g coconut 1 teaspoon baking powder 4 eggs at room temperature 150g butter at room temperature or soft butter alternative 150g sugar [or substitute with stevia but add 1 teaspoon bicarbonate of soda too] vanilla grated zest of 1/4 lemon or 1/2 lime
Method Preheat the oven to 180 C. Place all the ingredients into an electric mixer and use a K Beater attachment. You will need to sift the self raising flour twice. Turn on the electric mixer and whisk for a minute. Turn off and bring all the ingredients to the centre of the bowl by using a spatula Whisk again with the electric mixer for 1/2 minute The secret of these quick all-in-one cakes is not to overmix. Prepare a baking dish of 20 cm with Frylight spray. Pour the batter into the dish. Use a spatula dipped in water to flatten the top. Bake in the oven for 35 minutes. Test with a skewer and return to the oven for another 5 - 10 minute if and as required. Optional: While it is still warm lightly brush some warm honey or agave on the surface. Sprinkle with coconut and tilt the dish to remove any access. Allow to cool completely before you cut up and serve.
