Quick dips are the most convenient way to put a few ingredients together and this one for example can be served with other vegetables or a salad or spread on toast and can make a great main meal or a snack.
For the quick Avocado and tuna dip you will need:
1 large can Blue Angel tuna fish
2 tablespoons light mayonnaise
120ml plain yogurt [If you wish a healthier dip, leave out the mayonnaise and add 2 tablespoons extra yoghurt]
1/2 teaspoon lemon juice
1/4 teaspoon grated lemon zest
1/4 teaspoon dried herbs of your choice
1 teaspoon smoked paprika
salt and pepper to season as desired
Place all the ingredients in a bowl and use a fork to lightly break down the ingredients.
Place the mixture in a serving bowl and garnish with a sprinkling of smoked paprika and some more tuna chunks. Garnish with parsley or mixed herbs or fresh coriander, finely chopped.
Serve with a variety of fresh vegetables, croutons and sweet baked potato chips, soft pita bread or a crusty Maltese loaf. Or fill a tomato with the dip and serve on a bed of baby spinach.
