The Maltese Christmas log is unbelievably easy to make. It is a no-bake, fuss-free quick recipe and it will always taste wonderful as long as you use a good quality chocolate to coat it. It is usually made with condensed milk.
I think every can relax and enjoy their favourite sweets at Christmas but for a healthier, vegan, no added processed sugar version, try this recipe !
You will need:
3 packets plain biscuits [500g]
1 packet dates [250g]
300ml coconut milk
100g hazelnuts or almonds
4tbsp chocolate powder
350g Novibloc Fondente to decorate
Roughly crush the biscuits & chop the dates.
Place the coconut milk & the dates in a saucepan on low heat & stir until the dates break up & the mixture obtains a smooth consistency.
In a bowl mix the biscuit crumbs, the brandy, the hazelnuts or almonds, the cherries an the cocoa powder.
Use your hands to bring both mixtures together. Place in the fridge for at least 5 minutes.
Form the cooled mixture into a log shape and leave it in the fridge, covered, overnight.
The next day, decorate with chocolate that has been melted in a bain-marie or microwave. Sprinkle some icing sugar if you wish and finish off with other decorations of your choice.
