Quick and delicious Middle Eastern Kanafeh

This dessert never fails to impress. When I first came across it, I thought it would take endless hours to prepare but once you have the ingredients, it can be prepared in minutes and ready to serve in an hour. Below is a step by step video guide.

You will need:

400ml water
500g white sugar
400g Kataifi pastry [this cannot be replaced but available in supermarkets]
100g Ghee or replace with butter
350g Akkawi Cheese or a mix of equal parts of Mozzarella and ricotta
1tsp Rose water [ilma tal-ward]
1tsp orange blossom water [ilma zghar in Maltese]
Freshly squeezed juice of 1 lemon

Soak your Akkawi Cheese [or mix of ricotta and mozzarella] in clean water overnight to soften

Heat up your water and add all the sugar, rose water, orange blossom water and lemon juice. Stir until dissolved and set to one side

Break up the kataifi pastry either by using your hands or scissors

Melt the ghee or butter in a pot and drizzle over the pastry mixing it well with your hands

Press half the pastry into a cake tin

Break up the Akkawi Cheese and spread in an even layer over the first layer of pastry

Top the cheese with the second half of the kataifi pastry and press down firmly

Place in a preheated 180°C oven and bake for 30 minutes

Take out the oven and drizzle immediately with a simple syrup mixture

Decorate with slivered pistachios and rose petals
