All-in-one Macaroni Bake [lactose free]

all in one macaroni cheese
Baked all in one macaroni cheese using tricolor pasta and olive oil instead of butter

‘I love all-in-one recipes, be it cakes, soups or anything.  My recipe here is a simply all-in-one, bake and eat !’


You will need:

500g macaroni
a pinch of smoked paprika
1/4 teaspoon grain mustard
1 tablespoon flour
250g tinned tomatoes
100ml water
1 egg
1 small onion, chopped and cooked
a grating of fresh nutmeg
fresh ground pepper and sea salt
200g grated lactose free cheese

Cook the pasta following the instructions on the packet.
In a large bowl mix all the other ingredients together except for the cheeses. Use a hand held blender to bring it to a smooth consistency. Add half the cheeses and mix.
Preheat the oven to 180 C.
Prepare a dishes or smaller dishes with a baking spray.
Fill the dish/s with the pasta mix.  Sprinkle the rest of the cheese on top.
Bake for 45 minutes in the oven or until the top is golden.
Leave to rest for 10 minutes before serving.

    Oh My God, Lea! You are killing me with this… Mac & Cheese is my Achilles Heel… along with Grilled Cheese Sandwiches. I have to make this! I like to burn it slightly to make crispy on top. Speaking of Crispy… have you seen Ruth Reichl’s grilled cheese sandwich in her new book?

    Hello dear Lea, wish to tell you a very big well done for all d recipes you do on Tv – i follow you- thallini bla nifs dawk ricetti kollha…we need a book from you..apart from that i did this maccharoni cheese…i added also some milk…i think by mistake there’s d ‘milk’ missing from d recipe you sent us.. It came real good…nothing left.. Am looking forward for today’s prog…You go very well tog you nd Brian…

      hello Pauline thank you and for your lovely message. I did not use milk in my recipe. I cooked the pasta beforehand and used mascarpone, water and egg beaten up but no milk. I am so pleased that the recipe came out well. I do have a book in Maltese Dieta Mediterranja available from Agenda Bookshops 🙂 have a lovely day x
