Cinnamon and Orange Cake


Thisย is such an easy cake to bake. The mix of oranges and cinnamon remind me of Christmas approaching.

You will need:

250 g self raising flour
100 g butter
100 g sugar
2 tablespoons ground cinnamon
3 eggs
2 tablespoons honey
2 tablespoons orange juice
1/2 teaspoon bicarbonate of soda
Grated zest of one
Pinch salt
Some icing sugar to sprinkle on top of the cake

Pre heat oven to 160 C.
Prepare an cake dish with baking paper.
Sift the flour. Add the cinnamon and grated orange rind.
Add the butter and rub in until it resembles fine breadcrumbs.
Add the sugar, salt and bicarbonate of soda.
In a bowl beat the eggs. Heat the honey, just a little to soften it up.
Add the orange juice to the eggs.
Add the egg moisture it the flour mixture and mix gently,
Don’t worry if the mixture is slightly lumpy.
Pour the batter into the cake dish and bake for 40 minutes.
Leave to cool.
Dust some icing sugar on the surface.
