Simplest things are always best.
This is not my recipe, I do not know who really came up with such a great idea and it works.
Creamy banana ice cream, one ingredient, frozen bananas. The texture and consistency is incredible and there is no added sugar, it is gluten free, vegan and you can make it in the comfort of your home knowing exactly what has gone into it. Of course you can make your own variations and add vanilla, or chocolate or other fruit, spices and the combinations can be endless.
I made one using lemon Loacker wafers to garnish. I did squeeze some fresh lemon with the bananas before feeezing, but without also produces a fantastic result.
You will need:
juice if 1/4 lemon
Loacker Lemon wafers for garnish.
Make sure you use ripe bananas. Cut them up and freeze them in a bowl. Squeeze the lemon juice all over. When they have frozen, take them out and blend, using a food mixer or hand blender, not a liquidizer. The bananas will break down and then become very creamy with the consistency of ice cream.
Pipe the mixture into decorative glasses and garnish with a Loacker lemon wafer or freeze it again to solidify and use an ice cream scoop to serve.
