Cyd‘s salsa was fantastic and she shared with me her mum Valerie’s recipe.
You will need:
2 cans of diced tomatoes, drain one can of juice.
2 tbl of white vinegar
2.5 tbls of vegetable oil
3/4 tsp of salt
2-3 whole pickled jalapenos chopped ( to taste)
4 garlic cloves chopped
Mix all the ingredients together, an easy straightforward recipe. These are the ones I love especially in the summer. This salsa was perfect !
I am also including her guacamole dip which was equally divine and you will need:
3 advocados..peeled and pitted and mashed roughly
1 lime, juiced
1 tsp of salt
1/2 cup of onion
2 roma tomatoes diced
1 tsp of minced garlic
1 pinch of cayenne pepper
Mix all the ingredients together and serve, Cyd explains she does not add cilantro to her guacamole.
