A fruity yoghurt treat

This is quick to make, very fruity and looks wonderful. The quantities used are for a medium sized bowl and you can have it in individual clear small glasses or a huge bowl like a very fruity trifle without the cake. Some suggestions for fruit…. Plums, kiwis, a mix of orange and grapefruit segments, melon and mint….really yumm…

You will need :

Fruit of your choice, lots of it and cut into neat thin slices
150ml double cream
150ml yoghurt
2 tbsp honey
1/4 teaspoon cinnamon, optional

Lightly whip the double cream. Fold in the Greek yoghurt. Add the honey and use a metal spoon to mix in gently.

Layer the slices of fruit at the bottom of a dish and top with a layer of the Greek yoghurt cream, layer the fruit again and alternate until you fill your bowl. Top with a layer of fruit and the use a cake glaze to brush on top of the fruit layer. You can also use some warm apricot jam or you can simply brush it with some warmed up honey just before serving to give it a glossy finish.
