What’s for supper tonight?
An easy to prepare meal… under 10 minutes preparation time and its delicious.
I use Penne Tri Color from Barilla and make a quick sauce using Gorgonzola Dolce which is milder than the regular Gorgonzola as it has a short aging period. The combination of walnuts, wine and a touch of single cream is heavenly. No slaving in the kitchen tonight and a meal as good as or better than any good restaurant.
You will need :
Penne, allow 75 to 120g per portion depending on appetites
Gorgonzola Dolce, 1/4 cup crumbled, plus a few small chunks to garnish
Walnut halves, 3 per portion, broken roughly
Dried Oregano, allow 1/4 teaspoon for 2 portions
Dried flaked garlic, allow two flakes per portion, soaked and chopped up
1 spoon light single cream per two portions
6 spoons white or rose wine per two portions
Freshly Ground Pepper
Drizzle of olive oil
Parsley to garnish if desired
Cook the pasta in plenty salted water, and follow the cooking time instructions on your pack.
In a saucepan, heat up a touch of olive oil and cook the flaked garlic gently.
Add the oregano and cook further.
Add the wine, cook and reduce.
Add the single light cream and the Gorgonzola. Stir until the cheese melts and everything has smoothly combined. The sauce should have a satiny texture.
Season with sea salt and freshly ground pepper.
Drain the pasta.
Add the sauce and mix with the pasta.
Add half the walnut chunks and toss together.
Plate and garnish with the rest of the walnuts, the small pieces of Gorgonzola which you have left aide and parsley if desired.
Ready to serve !
