A light Pasta Lunch… Healthy Macaroni Bolognaise


A Saturday casual gathering … when everyone still has lots to do…..
Nothing nicer than a good plate of pasta in the sun to start off the weekend…..

This is a good quick recipe and will take no time at all to prepare and will give us enough energy without making us feel lethargic as it is light and wholesome…

Healthy Pasta Bolognaise!

You will need:

lean beef, onion, clove garlic, some wine, tinned tomatoes, tomato paste, olive oil, balsamic vinegar, Parmesan, add extra vegetables if desired. And some items for a light green and tomato salad…

Use lean beef from a good supplier…. this recipe serves four as long as you also have a lovely salas with it.

Prepare the sauce by cooking a finely chopped onion in a touch of olive oil. Add a clove of finely chopped garlic if desired.

Brown 500 g minced lean beef and brown.

Add two tins of chopped tinned tomatoes and a glass of wine.

Simmer for 30 minutes and add a spoon of tomato paste. Season and toss with cooked pasta of your choice.

Lightly sprinkle some grated Parmesan and chopped basil.

Will be devoured, I guarantee it….

I love lambs lettuce at the moment and will cut up some cherry tomatoes and my dressing will simply be a drizzle of Virginia olive oil, a few drops of balsamic and seasoning of freshly ground pepper and Maldon or kosher salt. I also like to tear up some basil leaves and mix them with the greens. Perfect eating on the verandah and enjoying the view ….
